Instructions

  1. Pull the espresso immediately before making the drink — it must be hot.
  2. Add espresso, NA coffee spirit, NA vanilla spirit/syrup, and simple syrup to a shaker.
  3. Add a generous amount of ice — at least half-full.
  4. Shake as hard as you can for 20 seconds. This is the critical step. Longer and harder than any other mocktail.
  5. Double strain through a fine mesh strainer into a chilled coupe or martini glass.
  6. Watch the foam settle for 15–20 seconds — it will firm and dome.
  7. Garnish with three coffee beans in a triangle.

If the foam is thin: Your espresso was too cold, you didn't shake hard enough, or the glass wasn't cold enough. All three factors matter.
