  2. Pour the chilled tonic down the side, keeping carbonation.
  3. Pull the espresso fresh — it must be hot and alive with crema.
  4. Pour the espresso slowly over the back of a spoon onto the surface — watch it marble down.
  5. Garnish with a lemon twist. Serve unstirred; the drinker integrates it.

Pro tip: Lighter, fruit-forward espresso roasts (Ethiopian, washed Kenyans) make a dramatically better espresso tonic than dark roasts — the citrus acidity bridges into the quinine.

The Story

The Espresso Tonic was born in specialty-coffee culture — Scandinavian baristas get most of the origin credit, with Koppi in Sweden usually named — as a hot-weather answer to a cold question: how do you serve serious espresso in July?

For years it stayed a coffee-shop insider order. Then two trends collided: the espresso martini's reign normalised coffee as a drink-drink, and the zero-proof movement sent bars hunting for NA serves with real adult structure. The espresso tonic was sitting there the whole time — bitter, dry, complex, zero alcohol, and equipped with the single most photogenic pour in the NA repertoire: dark crema cascading and marbling down through pale tonic.

It's the rare drink that works equally as a barista flex, a brunch order, and the "I'm not drinking but I want something interesting" answer — and it costs almost nothing to make spectacularly well at home.
