Why It’s Trending
The Virgin Mojito leads the non-alcoholic drinks category for a simple reason: it loses nothing essential in translation. The original Mojito’s soul is mint, lime, and effervescence — none of which require rum to shine. If anything, going virgin allows the fresh herb and citrus to speak more clearly.
By 2025–2026, it’s the most frequently ordered NA drink at bars — a reliable, crowd-pleasing option that never feels like a compromise. It’s the benchmark against which all other mocktails are measured: does it feel like a real drink, or does it feel like a consolation prize? The Virgin Mojito always feels real.
Ingredients
Classic Virgin Mojito (1 serving)
| Ingredient | Amount | Notes |
|---|
| Fresh lime juice | 30 ml / 1 oz | Always fresh — 2 limes typically |
| Simple syrup | 20 ml / 0.67 oz | Or demerara sugar syrup for more depth |
| Fresh mint leaves | 10–15 large leaves | Plus extra sprig for garnish |
| Soda water | 120–150 ml / 4–5 oz | Chilled; good mineral water adds texture |
| Crushed ice | Generous amount | Fills the glass |
Optional elevating additions:
- 5 ml coconut water for a tropical note
- A slice of cucumber for cooling depth
- A drop of rose water for floral complexity
- Seedlip Spice 94 (15 ml) for more cocktail-like structure
Instructions
- Muddle mint leaves and simple syrup in the bottom of a highball glass. Press firmly but don’t shred — you want bruised leaves, not mulch.
- Add fresh lime juice and stir briefly.
- Pack the glass with crushed ice.
- Pour soda water slowly over the ice to the top.
- Stir gently with a bar spoon — once or twice, not aggressively.
- Garnish with a fresh mint sprig (clapped between palms first) and a lime wedge on the rim.
- Add a bamboo or paper straw.
Mint muddling: The goal is to bruise the leaves to release the essential oils — not pulverize them. A gentle press with the muddler 3–4 times is sufficient. Over-muddling releases chlorophyll and creates a bitter, grassy taste.

Mint dominates the aromatics from the first moment; lime provides structure and tartness; bubbles lift everything and add texture. It’s possibly the most refreshing drink in the world.
Variations
| Variation | Twist |
|---|
| Strawberry Virgin Mojito | Muddle 3–4 strawberries with the mint |
| Mango Mojito | Add 30 ml mango purée — tropical and vibrant |
| Watermelon Mojito | Replace some soda with watermelon juice |
| Coconut Mojito | Use coconut water instead of soda water |
| Spicy Mojito | Add 2 thin jalapeño slices to the muddle |
| Seedlip Mojito | Add 15 ml Seedlip Garden 108 for botanical depth |
Zero-Proof Spirit Upgrades
For a more cocktail-like complexity, add 15 ml Seedlip Garden 108 (peas, rosemary, thyme) or Lyre’s White Cane Spirit (citrus, sugar cane notes). These ingredients add the perception of alcohol without any ABV.
