  1. Combine lavender honey syrup and lemon juice in a shaker or directly in the glass.
  2. Shake briefly with ice if using a shaker (10 seconds) — or stir gently in the glass.
  3. Strain into a coupe or fill a wine glass with ice and pour over.
  4. Top with sparkling water — pour gently down the side of the glass to preserve bubbles.
  5. Garnish: Lay a fresh lavender sprig across the rim. Optionally, a thin lemon wheel or small drizzle of honey on the rim's inside.
  6. Serve immediately.

Lavender intensity: Culinary lavender is stronger than expected. Start with 1 tbsp per batch and taste — lavender can quickly cross from "floral" to "soap." Less is more.
